Treat Yourself

My Favorite Pick of the Patch

September to January 1 is my FAV time of the year. Between the baking, football, holiday events (and did I mention the baking?), it truly fills my heart with happiness.
For about eight years now, I’ve made my “famous” cinnamon pumpkin bars, although I can’t take credit for them at all… Paula Deen, where you at girl?!
These pumpkin bars are INSANELY good. I am always asked by friends and family to whip up a batch when Fall comes blowing in.
I do add my own twist on them. When it comes to Fall season, I love using spices. Nutmeg, vanilla, pumpkin spice… all of those goodies are my added “extras.”
Pour yourself a glass of wine, and my bet is after reading this post, you’ll be high-tailing it into the kitchen to make these bad boys.

Paula Deen’s Pumpkin Bars

  • 4 eggs
  • 1 2/3 cups granulated sugar
  • 1 cup vegetable oil
  • 15-ounce can pumpkin
  • 2 cups sifted all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon (I add about 4 teaspoons!)
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • Megan’s Extras:
    *2 teaspoons pumpkin spice
    *2 teaspoons nutmeg
    *2 tablespoons vanilla

Bake for 30 minutes at 350 degrees

The recipe does call for a cream cheese frosting, but I use my own!

Meg’s Cinnamon Cream Cheese Frosting:
*1/2 cup shortening
*8 oz cream cheese (softened)
*2 tablespoons vanilla
*2 cups powdered sugar
*4 tablespoons cinnamon (if you’re not much of a cinnamon fan, use 2 tablespoons!)

I had the cutest little helper! Ceyla LOVES to bake and cook. 22709778_10156742729973574_147618911_n

I know that seems like a lot of cinnamon, but it takes a bit for the flavor to really POP in the midst of the cream cheese and powdered sugar! If that amount scares you, you can always add the cinnamon, more or less, to your liking.

Just dollop, spread, or pipe on top of each bar.

This recipe makes about 24 small bars or 12 big ones. Try this recipe and let me know what you think! I am certain you will not be disappointed!

My entire house smells of cinnamon, pumpkin, and vanilla…. mmmm yes please.
